What is a wheat allergy?
A wheat allergy is an allergy to any of the substances in wheat. It can be a food allergy, which affects you when you eat wheat, but it can also be a contact allergy, meaning you can develop skin symptoms such as a rash or urticaria when you touch it. There are four different major types of protein in wheat: albumin, globulins, prolamins, and glutelins.
